Wedding cake history and design

Your wedding is more than just a ceremony, it is an expression of your love, devotion and hopes. So why would you want an ordinary wedding cake? The wedding cake you select is an important way to express the elegance of your special day and makes a statement about your personality and the sense of style you wish to reflect.

From traditional to trendy, these days stunning wedding cakes come in all shapes, sizes and styles and with so many sweet options, choosing can be a difficult decision.

The earliest wedding cakes were made with barley and resembled a thin cracker more than a cake. Throughout the Middle Ages, the size of the cake symbolized prosperity for the newlywed couple. It wasn’t until the 17th century that the bride’s cake developed into the traditional form we recognize today.

The white, three-tiered, round cake has remained a classic throughout the years. Sophisticated and streamlined, it stays true to its purity by avoiding exotic flavors and heavy embellishments in favor of simple patterns, such as small swags, delicate scrolling or ivory rosettes. Whether a couple chooses a sophisticated elegant look or a more playful and whimsical appearance, it should always compliment the décor and ambiance of their reception.

Wedding cake toppers seemed to be less popular over the last few years, but are making a comeback. These elaborate toppers can be porcelain or crystal figurines and can be humorous, elegant or themed.

Theme Toppers

Humorous toppers can include the groom figure standing on the bride’s gown entitled “runaway bride,” “ball and chain” with the groom figure attached to a large ball or “he’d rather be golfing” figures. Other elaborate toppers include a lighted Cinderella’s castle or coach, western or military couples and many more.

At the Boca Raton Resort & Club, the most popular are still elegant floral toppers that tie into the room decor. For the top tier, a few fresh roses or calla lilies give a slightly updated look without sacrificing the classic style.

For a modern twist, individual mini-cakes are growing in popularity. These miniature wedding cakes allow you to choose from a range of designs, flavors and styles. An impressive cupcake tower can also incorporate a variety of flavors and frostings.

Other delicious options include Croquembouche, translated “crisp in mouth” the traditional French wedding dessert made from profiteroles coated with caramel and piled high in a pyramid which can be draped with spun sugar, chocolate or ribbons.

Cannoli, a traditional Sicilian pastry made of crunchy, tube-shaped dough, can also make quite an impression when flavored with vanilla, pistachios, candied-orange peel or chocolate chips and stacked on a towering pedestal.

Today’s wedding cakes are a masterful work of art that will captivate your guests’ palates and imaginations.

George Petrocelli is director of catering at the Boca Raton Resort & Club.
